It's magical for so many reasons, but there's a couple of reasons that stick out to many people.
First off, it's a moist gluten-free bread! There is no dry crumbly mess when you cut into it to create your bread slices or when take a huge bite off of your slice! It's moist and fluffy just like a loaf of bread should be!
Those savory flavors! It's a savory zucchini bread which is unlike so many of the sweet zucchini breads that you see all over the place today. The savory spices give you a drool-worthy warm and comforting feeling.
We can't forget to mention the deliciousness that sits atop the zucchini bread. That cheese!

You can you almost any type of cheese that you're craving and put it on top of this gluten-free zucchini bread. It's going to be fantastic no matter your choice!

The gluten-free bisquick mix adds a slight sweet taste in each bite and helps keep each bread slice extra moist and held together, just like a normal piece of fluffy bread does. You won't be missing the gluten one bit!
What is the texture of this gluten-free bread?
Like mentioned above, it's nothing like most other gulten-free breads that are dry, crunchy, flaky, crumbly, and cardboard-flavored.
This gluten-free zucchini bread is the opposite! It's a very soft, moist, smooth-textured bread. It's fluffy and doughy.

Gluten-Free Zucchini Bread Ingredients:
1.5 cups gluten-free Bisquick mix*
1.75 cups zucchini, washed, and finely diced in food processor
½ large sweet onion, finely diced in food processor
¾ cup parmesan cheese + shredded cheese of your choice for the top of the loaf
2 large eggs
¼ cup olive oil
¼ cup heavy whipping cream
How to make gluten-free zucchini bread?

- Preheat your oven to 350*F. Grease and flour your loaf pan. Finely dice your zucchini and onion in your food processor.
- Squeeze out extra moisture with your fists.In a large bowl, combine the eggs, oil, and heavy whipping cream and beat until combined well.
- Add in the zucchini, onions, cheese, and Bisquick mix in the large bowl and stir until well combined.
- Bake for 50-60 minutes or until a toothpick inserted into the center of the loaf comes out clean and the edges of the loaf are golden brown. Allow to cool on a wire rack before slicing and serving. Enjoy!
What type of flour to use?
What if I told you NONE.
You don't use flour in this recipe.
Instead you will use gluten-free bisquick mix. You can make your own and I show you how in the How To Make Homemade Gluten-Free Bisquick Mix post.
Or you can buy Bisquick's gluten-free version of their product if you have that available to you.
How do you work with the zucchini?
You do not need to peel the zucchini. That's right! Just keep the skin on the zucchini. You are going to be finely dicing the zucchini up so that slightly rougher skin will not be an issue!
Process the zucchini finely in food processor. This! You need to make sure that you have finely diced your zucchini up so that your zucchini bread is lumpy or inconsistent. Small, finely diced zucchini equals smooth slices of zucchini bread!
Squeeze out extra liquids. There will be extra liquid from the processed zucchini that you will notice in the bottom of the container that you place it in. We don't want the extra liquid because that will make your bread mushy and wet. Yuck!
Instead, we want to ring out the extra liquids by using a simple technique with a clean hand towel.
Grab a clean hand towel and place the wet finely diced zucchini in the center of your towel. Fold the hand towel around your pile of zucchini pieces, tighten the hand towel so that it is squeezing the pile of diced zucchini more and more snuggly. As soon as you are squeezing the zucchini hard enough, you will notice the liquids from the zucchini seeping out from the bottom of the towel.
This would be a good time to mention that you should be doing this over your kitchen sink huh?!?
Gluten-Free Zucchini Bread Tips:
Allow the loaf of zucchini bread to cool for 10-15 minutes in the loaf pan on your wire rack before removing it to cool the rest of the way on the wire rack by itself.

You can also store a room temperature baked loaf in the freezer. Simply slice your bread slices, then wrap it up nice and tight with tin foil and then seal it up in a zippie freezer bag for up to 5-6 months.
