There are certain things that I miss being gluten-free and all.
Sometimes I miss dinner rolls that are served at restaurants {especially if they come with that olive oil dip!}.
Sometimes I miss things on a stick at the state fair {and sometimes I don't}, and sometimes I miss all those thick creamy soups when it's cold and blustery outside.
And then I had had enough of it all and decided to experiment with what I wanted most... beer cheese soup!
Not any beer cheese soup, but I wanted to master a gluten-free beer cheese soup and not work hard at it at all.
So out came the slow cooker and a couple of attempts in the kitchen.

Beer Cheese Soup Pairings:
Partner this soup with doughy parmesan rolls, warm steamy sriracha cream broccoli, or beside some cheesy and savory zucchini bread!
This soup recipe is also great doubled as a beer cheese dip!
Dip chips, crackers, and veggies into this delightful warm, cheesy bath of savory goodness!
Crock Pot Beer Cheese Soup Ingredients:
- chicken broth: Make sure that this is gluten-free if you need to make this dish GF!
- bottle of beer: If looking for gluten-free variety recommendations, then my favorite has got to be Red Bridge!
- onion powder
- minced garlic
- granulated garlic: garlic powder will do here too
- worcestershire sauce
- salt and pepper
- crushed red pepper flakes: These are optional if you want a bit of heat
- sharp cheddar cheese, shredded
- heavy cream: You can substitute whole milk in here
- cornstarch: You need just a bit
What to garnish your beer cheese soup with:
The best options would be if you have green onion, croutons, popcorn, or bacon crumbles lying aroud for garnish!
Can I add meat to this soup?
I finally got it right and created a creamy, cheesy, hearty soup that tastes like I was slaving away in the kitchen and in actuality, I was at work, stuck in traffic, and at the gym.
I sometimes will add some yummy protein like juicy chicken breasts to the slow cooker, and shove a side salad at my other half for an amazing soup and salad feast in the middle of a chilly winter!
Why put popcorn in your soup?
I also have a thing for popcorn.
So.... I love dousing my soup with fresh popcorn.
Plus, I love hearing the kernels sizzle as the swim into the cheesiness!
How to make gluten-free beer cheese soup in your slow cooker or crock pot:

Get your slow cooker ready by adding a slow cooker liner to the inside of your Crock Pot if possible, then add ingredients and let simmer!

Stir in the cheese until it melts and combined. Then stir in the heavy cream and cornstarch thoroughly and let cook for another 15-20 minutes.

Add your garnishes and enjoy!
How to store and reheat leftover beer cheese soup:
You can store leftover cooled (to room temperature) soup in an airtight container in the fridge for up to 4-5 days.
To reheat, simply place the desired amount in a microwave-safe bowl with a loose-fitting lid.
Microwave on high power for 1-2 minutes, stir, and assess how warm it is.
You may need to microwave your portion for longer using 30 second increments until you reach your desired temperature to devour and enjoy again!

This gluten-free slow cooker beer cheese soup is as simple as mixing a few simple ingredients together and letting it cook! The combination of cheddar cheese, your favorite gluten-free beer, and tasty spices provides the base for this creamy, cheesy, warmly addicting soup!
Ingredients
- 32 oz . GF chicken broth
- 12 oz . GF beer, my fav is Red Bridge
- 1 tablespoon onion powder
- 1 tablespoon minced garlic
- 1 tablespoon granulated garlic, garlic powder will do here too
- 1 ½ teaspoon GF worcestershire sauce
- ¼ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon crushed red pepper flakes, optional
- 3 cups sharp cheddar cheese, shredded
- ½ cup heavy cream
- ⅓ cup cornstarch
- green onion, croutons, popcorn, bacon crumbles for garnish
Instructions
- Put your slow cooker liner in your crockpot and place the chicken broth, beer, onion powder, minced garlic, granulated garlic, Worcestershire sauce, salt, pepper, and pepper flakes. Cook on low for 6-8 hours.
- Stir in the cheese until melted and combined. Then stir in the heavy cream and cornstarch thoroughly and let cook for another 15-20 minutes.
- If the cheese doesn't melt consistently you can use a hand mixer to blend to a thinner consistency. Add your garnishes and enjoy!
