It wasn't until I was well into adulthood when I tried my first fried green tomato.
Why did I wait so long???
Fried green tomatoes, with their juicy green tomatoes all warm and tender on the inside and the crisp crunchy, garlicky breaded outside... are ridiculously addicting!
Wow! I had been missing out!
This recipe takes slices of fresh green tomatoes and easily breads them in a delicious garlic gluten-free breadcrumb mixture and then quickly fries them in the air fryer using barely any fry oil (oh hey there healthier option!) or flash fried in your favorite skillet.
This produces a golden outer crust and a warm savory tomato center!

I absolutely LOVE my OMORC Air Fryer!
I am a HUGE fan of my OMORC air fryer and air fryer accessories.
To the point that I now own two air fryers!
My second air fryer is the Ninja Foodie Grill – it air fries, roasts, grills, and even dehydrate all in one easy-to-clean kitchen appliance, which is great for small kitchens that are short on countertop space or storage!
Recipe Ingredient List:
- 1 large unripe green tomato, sliced into ¼” thick slices
- salt and pepper to taste
- gluten-free all-purpose flour blend
- garlic powder
- onion powder
- paprika
- 2 eggs, beaten
- milk
- homemade gluten-free breadcrumbs
- oil for frying (canola or peanut oil are fantastic here!) if you are using the skillet method. If you are using the air fryer method you will need a spritz or two of cooking spray.
Recipe Instructions:
- Sprinkle tomato slices with salt and pepper. In one bowl, stir the flour blend, garlic powder, onion powder, and paprika together. In a second bowl, mix the eggs and milk, and in a third bowl pour the breadcrumbs.
- Dredge the tomato slices in the flour blend, then the egg mixture, allowing excess the drip off before placing the tomato slices into the breadcrumb bowl, pressing the breadcrumbs carefully into each tomato.
- Carefully lower each breaded tomato into the bottom of the air fryer basket that has been lightly sprayed with cooking spray, and fry for 5 minutes. Using a spatula, carefully turn each fried tomato slice onto the other side and air fry for an additional 3-4 minutes.
- Using the same spatula, remove each tomato slice when done to a paper towel-lined plate to cool for 1-3 minutes. Serve while still warm with your favorite dipping sauce.
Pro Tips:
Please make note that there are directions on this page for both the AIR FRYER version as well as the SKILLET / STOVE TOP version!
Leftover Storage Instructions:
First, I highly recommend letting the fried green tomatoes that you plan on storing as leftovers, cool down to room temperature before considering to store them.
That will prevent a lot of extra moisture buildup in your storage container and less moisture to make your leftover fried green tomatoes soggy.
Place your cooled fried tomatoes in a food-safe airtight storage container and put it in the refrigerator for up to 2 days.
To reheat your chilled leftover air fried tomatoes, place your fried tamaters on an oven-safe plate or baking sheet and let them cook in a warmed-to- 325*F oven for 3-5 minutes.
Alternatively, if you want to fire up your air fryer, you can pop your leftover fried green tomatoes in the bottom of your air fryer, making sure that they are not touching one another, and air fryer at 325*F for 3-5 minutes or until your preferred warmth is achieved.

and milk, and in a third bowl pour the breadcrumbs.
3. Dredge the tomato slices in the flour blend, then the egg mixture, allowing excess the drip off before placing the tomato slices into the breadcrumb bowl, pressing the breadcrumbs carefully into each tomato.
4. Carefully lower each breaded tomato into the hot oil and fry for 1-2 minutes, until the breading that is in the oil starts to turn a golden brown.
5. Using a spatula, carefully turn each fried tomato slice onto the other side and cook for the same amount of time. Using the same spatula, remove each tomato slice when done to a paper towel-lined plate to cool and set. Serve while still warm.
