Best Gluten Free Fish Sticks!
These air fryer fish sticks are the best fish sticks I have ever had!
Hands down, these 4-ingredient homemade fish sticks are so warm and tender on the inside and perfectly crisp and golden on the outside.
They cook up in 15 minutes and leave you with just one dish (your air fryer basket) to clean!
I use my Gluten-Free Bread Crumbs recipe for the breading along with a quick dip of the fish filet into creamy mayonnaise instead of egg.
Why mayo you ask?
Mayo is great to help breading to set up on meat and the flavor gives it more depth and flavor than a basic egg would.
These are seriously the BEST fish sticks of all time!
Best Fish Stick Pairings:
My family loves to pair our fish sticks with a delicious salad, like the Homemade Apple Poppyseed Salad, Spring Chimichurri Salad, Cucumber Pasta Salad, Chipotle-Lime Radish Salad, Spicy Cucumber Salad, or Fall Rosemary Maple Peach Salad!!!

What Air Fryer to Use?
I absolutely LOVE my OMORC Air Fryer!
I am a HUGE fan of my OMORC air fryer and air fryer accessories.
To the point that I now own two air fryers!
My second air fryer is the Ninja Foodie Grill - it air fries, roasts, grills, and even dehydrate all in one easy-to-clean kitchen appliance, which is great for small kitchens that are short on countertop space or storage!
Gluten Free Fish Sticks Directions:
- Cut the filet into "finger" sized sticks. Place the mayo in a medium mixing bowl and drop the fish fingers in the bowl and coat the finger evenly with the mayonnaise.
- Place the breadcrumbs and the grated cheese in a plastic food-safe bag with the fish fingers and toss to coat the fish evenly on all sides.
- Spray the bottom of your air fryer with a light misting of cooking spray and place the fish sticks on the bottom of the air fryer basket, making sure that none of the sticks touch one another. Add another light dusting of cooking spray to the top of the fish sticks.
- Cook at 400*F for 14-16 minutes, or until the internal temperature of your fish sticks is 145*F and your desired level of crispy crunchy coating is achieved. Remove from heat and allow to cool for 1-2 minutes before serving still warm.
Recipe Pro Tips:
If you use a different bread crumb recipe than the one recommended for this recipe, you may want to add in garlic powder, onion powder, or paprika to taste.
I have not used a different type of mayo besides the beloved regular type - so low-fat, low sugar, whatever other types are out there - you can try them at your own risk, I am not sure how the final product will turn out.
As long as you spray the bottom of the air fryer basket and the tops of the fish sticks with a light misting of cooking spray, you will likely not need to flip your fish sticks over half way through.
If your air fryer does not do as good of a job circulating air evenly as mine does, then you may need to flip them over halfway through the frying process.
If you feel you need to flip them, use a supportive spatula to gently lift them and flip them over so as they do not break apart while still cooking.
How to Store Your Leftovers:
You likely will not have leftovers of this dish, but in the event that you do, you can store your leftover cooled fish sticks in an airtight food storage container in the fridge for up to 48 hours.
To reheat your homemade fish sticks, place the fish sticks in your air fryer with a light spritz of cooking spray at 350*F for a few minutes to warm them through completely.
