Sometimes I surprise myself and feel the need to go back in time to a time when recipe cards were used.
It's kind of like that feeling you get when you read a book. Not a kindle, but a book with paper pages that you get to touch and flip.

I forget that when I was growing up, that when I found a recipe that I absolutely LOVED, that I wrote it down.
I forget about all these recipes stored inside these little retangular time machines also known as recipe boxes.
There's also something so therapeutic about creating a recipe from a handwritten recipe card.
This chipotle lime salad is one of those recipes that I've had stored away for years, keeping it safe but hidden for too long.
Recently I found it while going through some old recipes, made it, and remembered why I had saved it so many years ago.
This recipe is more than amazing!

Best Chipotle-Lime Salad:
This salad is refreshing, with the crisp juicy vegetables. Every crisp bite better than the bite before.
The chipotle-lime vinaigrette dressing lightly coats each piece of vegetable, giving it a light, almost smokey, hint with every mouthful.
Another perk of this salad is that it is amazing on day 2 too!
Yes! This salad is AMAZING if it gets the chance to marinade in it's own dressing while chilling in the fridge. - Not many salads can say that!
The vegetables tend to soak up the flavors of the dressing as it waits for your appetite.
Salad Ingredients:
- 3 ears of fresh corn, shucked and kernels separated from the cob, or 2 large cans of sweet corn kernels
- 8 small-medium radishes, sliced into very thin or chopped thinly
- ½ sweet red onion, chopped
- 1 jalapeno, diced, deseeded (de-seeded, otherwise it will be incredibly spicy!)
- ¼ cup Italian parsley, chopped
- ¼ cup fresh lime juice, or juice of 2-3 small limes
- olive oil
- ground coriander
- chipotle chili powder
- granulated garlic or garlic powder
- black pepper
- coarse salt or table salt
How to Make Chipotle Lime Salad:
- Combine the corn, radishes, onion, jalapeno and parsley in a large mixing bowl.
- in a smaller mixing bowl, combine all other ingredients and stir thoroughly.
- Pour the chipotle-lime dressing over the corn and radish mix and stir until well-coated. Chill in the refrigerator until ready to serve. Enjoy!
How to Store Leftover Radish Salad:
Store your leftover salad with the dressing mixed in, in an airtight food-safe plastic storage bag or fridge-worthy container for up to 3 days. It likely won't last that long!
Recipe Variations:
Feel free to use whatever fresh vegetables that you have on hand for this recipe, but I'd recommend keeping the dressing ingredients as-is because it is AMAZING all put together!

This is a perfect summer salad for me. Having recently become obsessed by radishes (roasted as well as fresh), I'm always up for making them the star of the show. Great way to spice up a mild meal.
