We love making pork chops for dinner.
I usually pick up center cut bone-in loin pork chops.
The bone in "bone-in" adds a tremendous amount of savory flavor and the marbling (or the pieces of fat that you can see throughout the pork chop that kind of resembles the marble lines in a countertop) adds so much flavor to the meat, and in this case, the mushroom gravy as well.
Cooking Pork Chops in the Instant Pot can be a little bit tricky because of how quickly they cook! No one wants overcooked, dried-out pork chops!
However, cooking flavorful & juicy pork chops is incredibly easy if you follow along with this recipe.
I know a lot of homecooks are also nervous with cooking pork at home not just because of the potential of cooking up overcooked shoe-leather chops but because of the horror stories about undercooked pork too.
If you have been scarred by the thought of undercooking pork, the answer is cooking your pork chops in the Instant Pot.
The pressure cooker cooks at a high temperature for a short amount of time. According to USDA, pork only needs to reach 145°F to be safe for consumption, a lower temperature that they told the public was safe for many many years. This helps to keep the pork juicy and using the sauté button creates a beautiful golden brown outside and gravy!

Cuts of Pork Chops:
There are so many different cuts of pork chops out there! (Those animal and meat science classes in college just before veterinary school are now being put to good use!)
- pork loin bone-in chops
- center-cut loin chop
- boneless pork chops
These cuts are all are made of different types of meat from the animal with different cooking needs.
Some of these pork chop cuts need a long cook time to help break down the tougher tissue to create tender pork chops and other types of pork chops need to cook in liquid and are braised (the meat is seared and then stewed in liquid) to help keep the meat from drying out and overcooking.
Keep in mind that the thicker the cut of pork chop the less likely it will be to overcook.

Boneless pork chops will cook quicker and are generally very lean and benefit from cooking in the moist Instant Pot.
So, boneless pork chops are another great choice for this recipe. Yes, the bone in the bone-in pork chops helps add to the flavor of this recipe but boneless chops will still have PLENTY of flavor!
Different Thickness of Pork Chops
Like I mentioned above, the thickness of the pork chops you pick up will also make a big difference in the cook time of the meat and the likelihood that the pork chops will be undercooked or overcooked.
Remember that the thicker your pork chops are, the less prone to overcooking they will be!
I use pork chops that are at least ¾ -inch thick to 1 inch thick for this recipe.
If you’re using a thinner pork chop, you’ll need to cut down on the pressure cooking time, so if the chops are ½-inch thick, I would cut the cook time in half. If you're using a thicker pork chop, you will have to add additional time on to your cook time.
Adjusting the Recipe: Doubling or Halving
When halving the recipe, I usually reduce the amount of pork chops and still make the full amount of gravy, because I can smother chicken in the extra gravy. I also want to make sure there’s enough liquid in the Instant Pot to come to correct pressure. You will not be upset with extra of this easy mushroom gravy! Another perk? No change to the cook time!
If you want to add in more pork chops to this recipe you definitely can! You can double the amount of pork chops without adding additional ingredients or cook time to this Instant Pot recipe.
If you’d like to up your amount of gravy for those additional pork chops, you can also double the liquid when making the mushroom gravy.
What is the Safe Cooking Temperature for Pork Chops?
The USDA lowered the recommended safe internal temperature in 2011 from 160°F to 145 °F with a 3 minutes rest time. That means pork chops can be served a little pink and don't need to be sooooooo hot in the center.
Just be sure to check the internal temperature with your meat thermometer. As long as your meat thermometer shows that the pork chops are cooked above 145°F, you're good to go!
How Long to cook pork chops in Instant Pot
Pork Chops can vary in the pressure cooker based on size, thickness, marbling and brand of pressure cooker. You will need to vary the cooking time slightly depending on how different your items are from the ones that I use.
I use chops about ¾″ to 1″ thick with bone in.
Bone-In Chops about 7-9 minutes (7 minutes for ¾″ thick and 9 minutes for 1″ thick).
Boneless Loin Chops I cook to 6-7 minutes.
How Much Time do I Need to Add if I Want to Cook More Pork Chops in Instant Pot?
You can use the same amount of time with the extra chops. The only difference is that the “get up to pressure” time will be shorter.
For this recipe, if you add in extra pork chops, you will not need to wait 2 minutes using the natural pressure release.

- ½ medium sweet onion, chopped
- 4 pork chops
- 1 tablespoon Worcestershire sauce
- 1 cup chicken stock
- 1.5 tablespoon corn starch
- ⅓ cup sliced mushroom pieces
- ½ cup sour cream

How to Make Pork Chops in the Pressure Cooker
Pork chops in the Instant Pot are pretty easy to make!
- Brown onions: Set your Instant Pot to sauté. Add the butter and cook onions until softened, approximately 2-3 minutes. Add the pork chops and allow to sear on both sides, approximately 2-3 minutes, flipping chops so that both sides of each pork chop is lightly browned.
- Cook Pork Chops: Turn your Instant Pot off. Add the chicken stock and Worcestershire sauce, scraping the browned bits from the bottom of the instant pot (they carry so much flavor with them!). Close your Instant Pot and cook under the "pork" setting for 8 minutes. Do a natural pressure release for 2 minutes, then manually release remaining pressure and open the Instant Pot lid.
- Thicken the Sauce: Remove your hot, cooked pork chops from your Instant Pot and cover them in the microwave to keep warm. Set your Instant Pot back to the sauté function, add in the cornstarch, mushroom slices, and sour cream, stir to combine, and then simmer sauce for a few minutes until slightly thickened, approximately 3-4 minutes. Enjoy!
How To Thicken the Mushroom Gravy:
Set the Instant Pot to Sauté. Once simmering, add in the cornstarch, mushrooms, and sour cream. Continue to stir the gravy until the cornstarch has dissolved fully (Once the corn starch reaches a certain temperature, it will quickly start to thicken). Then you can slow the amount of stirring until the sauce starts to thicken.
What to Make With Pork Chops
You can serve these with a sprinkling of parsley overtop the smothered and warm mushroom gravy. During the summer, I like to serve them with my Sweet Potato Fries, Easy Teriyaki Green Beans, and Cheesy Zucchini Bread.

What to Do With Leftover Pork Chops?
Leftover Instant Pot pork chops will keep in the refrigerator in an air-tight container for up to three days. Store the gravy separately in it's own air-tight container. They will keep for one month in the freezer.
