How about a green bean dish that looks all fancy, sounds all fancy, but isn’t fancy at all?
How about a green bean dish that tastes gourmet, smells like you’ve been slaving away in the kitchen, but in reality, it’s taken you only minutes to prepare? How does all that sound?
And the best part?
It will look like you had been in the kitchen sweating to make this dish happen, when in reality… it was soooooo easy-peasy.
So when I tell you that these are easy bleu cheese green beans, I mean that they are easy!
To me it sounds great.
I don’t want to be cooking in the kitchen all day {even though I looooove cooking!}, I want to be socializing/drinking/eating {in that order} with family and friends.
So easy and quick dishes {especially ones that are impressive without lifting too many fingers} are the way to go.
That’s why I am sharing this easy green bean dish with you today.

- fresh green beans, trimmed
- olive oil
- fresh ground pepper
- crumbled bleu cheese
- chopped walnuts, toasted {you don't have to toast them if you don't want to!}
How to make easy Blue Cheese Green Beans:

The hardest part of this dish is sprinkling on the bleu cheese {because I want to eat all the cheese before it hits the beans!}.
Just cook {there are two ways to do this quickly!} and season your beans, then add the cream sauce {which is basically melted bleu cheese!} to your liking.
Then go enjoy your Thanksgiving friend, because that’s what this holiday is about.
Here are the TWO steps to making this green bean recipe:
- Cook your green beans, by either baking them in the oven or by stovetop. See recipe notes just below for each of these options!
- After the beans have been cooked to your desired tenderness and while still hot, quickly sprinkle the pepper, cheese, and walnuts on top, and stir to combine. Serve immediately.
How to cook your green beans:
I love that there is the option to either roast the green beans in the oven, or cook them on the stove top!
You never know when that oven to going to be overcrowded with other delicious Turkey Day dishes, so a stovetop option is really nice around the holidays!
How to cook green beans on the stove top:
- Bring green beans and ¼ cup water to a boil in a large skillet over medium heat.
- Once boiling, turn down to allow only a slight simmer, cover, and cook an additional 2-4 minutes.
- Uncover, continue cooking, and stir occasionally, until water is evaporated.
- Remove from the heat and add the oil.
How to cook green beans in the oven:
- Preheat your oven to 350*F.
- In an oven-safe baking dish, add your green beans and olive oil.
- Bake for 8-12 minutes, depending on your desired tenderness.
Doubling your green bean recipe:
This recipe can easily be doubled!
Simply combine double of each ingredient at the time that the recipe calls for it! Yum! More green beans!
How to store leftover green beans:
You can store your leftover blue cheese green beans in an airtight container in the fridge once cooled down to room temperature for up to 3 days, but they won't last that long in your fridge once you know how easy they are to reheat and devour again!
How to reheat leftover blue cheese green beans:
To reheat your leftover refrigerated blue cheese beans, simply place the amount you would like reheated in a microwave-safe dish with a cover on it in the microwave with your green beans.
Microwave on high in 30 second increments, checking the temperature after each 30 second cooking interval until the desired temperature is met.
Green beans can heat up quite quickly in the microwave so be sure to check them every 30 seconds for doneness. Don't burn yourself!
