How do you make Caprese Tomato Bites?
- Carefully slice the top of each tomato and the bottom of each tomato (so the tomatoes stay upright) off and discard the ends.
- You may choose to scoop out the insides of the tomatoes if you wish to fill your tomatoes with the cheese mix, otherwise disregard this step.
- Stand the tomatoes upright on one of their cut ends. Set aside.
- In a mixing bowl, combine the goat cheese, cottage cheese, basil, and salt and pepper. Using a hand mixer, mix the cheese and spices together until it becomes a whipped consistency with possible chunk or too still left.
- Place a small amount of the spiced cheese on top of each tomato or inside the tomato if you scooped out the insides of the tomatoes.
- Drizzle with balsamic vinegar and enjoy!

I would highly recommend paying attention to what goat cheese you use for this recipe. There are many types of goat cheese out there, and there's one type in particular that you need for this recipe: you need a log of soft goat cheese. Not goat cheese crumbles, no seasoned or flavored goat cheese, just a plain goat cheese log. This goat cheese log will be easier to mix with the other ingredients and much easier to spread on to the tomatoes.
What should I serve after these Caprese Tomato Bites?
If you are serving these bites as an appetizer, move to a main dish that does not have tomatoes as the hero. Here are some great main dishes that pair well with Caprese Bites:

- Of course you can add extra basil to the tops of each tomato bite too! Cut your basil into thin ribbons, keep it chopped like I did when I took these pictures, or place individual basil leaves into the cheese mixture of each caprese tomato bite for a beautiful topper.
- I have recently started playing around with a variety of different sizes, shapes, and colors of tomatoes. This colorful, juicy variety of tomatoes spread over your serving tray will definitely trigger extra attention to be placed on your caprese bites. Simply gorgeous finger food!
- Want to be a little gutsy? Try drizzling honey on top of each caprese bite instead of balsamic. It's still sweet like balsamic, but it cuts out that tangy zip. - 2 oz . goat cheese
- 1 tablespoon basil, chopped
- cracked black pepper and salt to taste
- ⅓ cup cottage cheese
