Okay, so there's a lot going on here. There's heads of grilled romaine lettuce, there's grilled chicken and shrimp skewers, and there's homemade Caesar dressing.
What if I told you that this complete meal can be made in under 20 minutes... AND is a super cheap recipe...... and is healthy for ya? Would you try it?
Okay y'all, so let focus on this "healthy" part for a sec y'all. The reason why I consider this meal a healthy meal is that one, it's a salad {deeeer}, and secondly, I swapped out the heavy creamy base of the Caesar salad dressing with a low-fat Greek yogurt with some added lemon juice. Much much healthier for all us eaters out there {throws her hands up in the air and tries for a 'whoop whoop'}.
Then there's this thing called anchovy that may throw a lot of people off. Me too y'all! I'm not a seafood lover and these little fish creep me out. But, nowadays they make this less-stinky thing called anchovy paste that cost less than $2 that you add into the Caesar dressing to make it legit (because legit Caesar dressing calls for the creepy fish).
Where do you find this paste you ask? From doing some research, it sounds like most large grocers stock the little tube of creepiness. I found mine with the canned tuna (with the french wording facing out so the first 3 times I went down the aisle looking for the paste, I skipped right by it). Others have found it with the prepackaged crab meat in a tub, some in the frozen seafood section (weird since it shouldn't be frozen), some in the refrigerated milk area, and strangely by the canned tomatoes. What? I finally came to find the anchovy paste by asking Helda the Russian butcher {I kid you not. I can't make this stuff up} working behind the meat counter at my local Kroger. Helda rocks.
Be sure to wash, halve, and fully dry your lettuce before attempting to grill. Let my mistake be advice to ya... wet grilled lettuce turns into burnt willed lettuce. Boo. Just dry the lettuce heads before attempting this y'all, trust me.
Top your grilled Caesar salad with your fav croutons, shredded parm cheese, and bacon crumbles {our crumbles were left over from the previous meal- gasp! Left over bacon rarely is a thing in our house}.
Grilled Shrimp + Chicken Caesar Salad
Ingredients
- 1 head of romaine lettuce, or the lettuce of your choosing
- 2-4 skewers of meat of your choosing, we wanted shrimp and chicken kabobs
- ½ cup non-fat greek yogurt
- ⅓ cup freshly grated parmesan cheese
- 2 tablespoon olive oil + a splash extra to drizzle over the lettuce for grilling)
- 1 ½ tablespoon fresh squeezed lemon juice
- 1 teaspoon dijon mustard
- 1 teaspoon anchovy paste
- 2 cloves garlic
- ⅛ teaspoon cracked pepper
- cracked pepper, croutons, extra cheese, and bacon crumbles for sprinkling on top of your salads.
Instructions
- Split the lettuce in half, hot dog-style. Wash the lettuce and allow to dry completely before starting the cooking process.
- Grill your meat kabobs. While your meat is grilling, you can prepare your caesar dressing*.
- Gently brush the inside of each lettuce half with olive oil. Kiss the lettuce heads (insides down) on the grill, for about 30 seconds over high heat. There will be grill marks and browning starting to form around the edges.
- Pile your meat kabobs, your croutons, cheese, cracked pepper, bacon crumbles (any extra lemon juice), and your homemade caesar dressing (below) onto your delicious grilled lettuce.
- *Caesar Dressing Instructions: Combine the greek yogurt, lemon juice, garlic, parmesan, anchovy paste, cracked pepper, and mustard together in a food processor. Blend the ingredients until smooth.
- Enjoy it messy!
