Make this garlic cilantro lime cauliflower rice in 15 minutes for a fast, healthy side dish option that will go with almost anything and that everyone will enjoy!  Fluffy “rice” tossed in a garlic cilantro lime drizzle will be the hit of your dinner table!

This super simple dish tosses in some fresh cilantro (my family likes to veer on the side of more cilantro over less cilantro!) and some garlic for a really tasty and light side for your evening meal.

Can I Use A Bag of Frozen Cauliflower Rice?

Yes you certainly can. I do all the time!

You will likely need to cook your cauliflower rice more toward that 12 minute mark versus the 10 minutes, when the instructions recommend cooking the cauliflower rice for 10-12 minutes.

Ingredient List:

  • 1 head of cauliflower OR 2 bags of fresh or frozen prepped cauliflower rice
  • olive oil or butter
  • minced garlic
  • ground cumin
  • fresh cilantro, chopped (we like the ‘more cilantro’ option)
  • green onion, finely chopped
  • juice of 1 lime
  • salt

Recipe Instructions:

  1. Heat oil or butter in a skillet over medium heat and add in the minced garlic, and cook for 1-2 minutes, until just fragrant and turning a golden brown.
  2. Add in the cauliflower rice and cumin and cook for another 10-12 minutes, stirring occasionally, until soft and fluffy. Remove from heat.
  3. Stir in the cilantro, green onion, lime juice, and salt and enjoy while still warm!

How to Store Leftover Cauliflower Rice:

Store your leftover Garlic Cauliflower Rice after your rice has cooled down to room temperature.

Once at room temperature, store your leftover in an airtight food-safe container, in the refrigerator for up to 2 days.

How to Reheat Leftover Cauliflower Rice:

To reheat your chilled leftover cauliflower rice, place your rice in a microwave-safe bowl or dish with a loose-fitting lid or paper towel over top of the dish.

Make sure that the lid or cover is not tight and still will allow warm air to escape.

Microwave on high power for 30-60 seconds depending on how much you are reheating at one time and how hot you like your reheated dish!
