Who doesn't love an easy crockpot recipe? Yeah I don't know anyone either. Who doesn't love a crockpot recipe that smells up your house with dinnertime smells the second your nose gets inside that front door after a long day at work? Well, this isn't that recipe.
It isn't this recipe because I tried making it just the other day. I absolutely LOVE this recipe, so I was so incredibly excited to head home after a long day at work and walk to a wonderful-smelling kitchen.
I did the small amount of prep work needed before work, and wanted to walk in to magic happening after work.
I walked into my house and didn't smell a damn thing. What the? I went right up to my crockpot and the damn thing wasn't on. Like I said before, this recipe is not a cook-all-day-and-ready-for-
I was so determined to have my spicy gluten-free chicken and dumplings that I started all over {turning the crockpot on high this time} and my poor Hubby and I had dinner at 10pm.... But it was so satisfying! We actually ate all four servings! I was so proud of myself for remembering to turn the slow cooker on the second time around, that I went right to bed because.... well, 10pm is also my bedtime.
What to pair with Gluten-Free Chicken and Dumplings:
How about some delicious gluten-free jalapeno cheddar cornbread muffins or some gluten-free zucchini bread to dip into your chicken and dumplings! YUM!
Gluten-Free Chicken and Dumplings Ingredient List:
- 5 chicken breast halves, 6 if on the smaller/thinner side
- 1 large carrot, chopped
- 2 cans GF cream of chicken*, 10.5oz
- 2 cans GF chicken broth**, just use the cans from the cream of chicken to measure
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- ½ teaspoon cracked black pepper
- ¾ cup GF homemade "Bisquick Mix"***
- ⅓ cup milk or buttermilk, we use buttermilk
- 2 tablespoon unsalted butter, melted
- 1 egg
How to make Gluten Free Chicken and Dumplings:
- Place a crock pot liner on your crockpot. Place the chicken, carrot, cream of chicken, chicken broth, cayenne, black pepper, and paprika in the crockpot and cook on high for 5-6 hours or low for 8-9 hours.
- During the last 30 minutes of cooking, make the dumpling dough by combining the homemade GF "Bisquick mIx", buttermilk, egg, and butter together in a large bowl. Form the dough into egg-sized balls and lightly drop each dumpling into the crockpot with the chicken. Cover and cook the last 30 minutes.
- Serve warm and enjoy!

You should store your leftover chicken and dumplings in an airtight container in the fridge for up to 2 days after cooking.
But you don’t need to worry yourself about that. Most likely will not last that long after your family hears about how easy this dish is to reheat!
How to reheat leftover chicken and dumplings:
To reheat your turkey stir fry, simply place your desired amount of stir fry in a microwave-safe dish and microwave it covered on high.
Microwave times will vary because of the amount of soup your are reheating and how hot you like your reheats.
Typically I would recommend microwaving your easy chicken and dumplings for a time between 60-120 seconds.

Try topping your gluten-free chicken and dumplings with some fresh chopped herbs. I highly recommend parsley! It's so lush a green but it's soft flavor doesn't distract from everything coming from your bowl of soup!
I like to sprinkle my bowls with a little bright red color before serving them.
If you like spice, try a small shake of your chili powder or crushed red pepper flakes!
For a milder yet beautiful effect, try sprinkling a pinch of paprika on your bowls of chicken and dumplings before serving!

I am making this right now! I added onions, garlic, celery and peas to the recipe. Spiced my chicken breasts with salt, ground blk pepper and paprika and cut into little chunks. Making the dumplings with Bob's Red Mill Gluten Free Biscuit Mix. (2 Tblsp veg oil, 1/2 C Milk, 1 C Biscuit Mix). Otherwise proceeding as directed. 5-6 hrs in crock pot on high.
