Simple Directions:
- Preheat your grill over medium heat. Pour the can of chipotle peppers in adobo sauce in your food processor and pulse until the peppers are finely diced and the sauce has turned into a dark red paste. In a medium mixing bowl, combine all ingredients except the ribs, and stir until well combined. Set aside.
- Remove your ribs from the packaging and place on the grill. Brush the top of the ribs with the adobo sauce using a basting brush. Allow to grill for 30 minutes.
- After 30 minutes, flip the ribs over to the other side using meat tongs. Brush the underside with the adobo sauce using the basting brush, and allow to grill for another 30 minutes.
- Continue this pattern of flipping every 30 minutes followed by brushing on more adobo sauce for a total of 1.5-2 hours, or until the internal temperature of the ribs reaches 145*F.
- Once done, remove from the grill and allow to cool for 5 minutes before serving while still warm.
Recipe Pro Tips:
All grills are going to vary in how they will grill your meat.
Try to keep your ribs over the most level amounts of heat as you can find on your own grill for the best, most evenly-cooked ribs.
If you are serving up these ribs for someone who may not be the biggest fan of heat, then I would recommend using 1-2 chipotle peppers tops when putting the peppers in adobo sauce through the food processor.
The chipotle peppers are jalapeno peppers in sauce, so the fewer the peppers in the sauce, the milder in temperature the sauce will be once off the grill.
Adobo Pork Rib Pairings:
If you are looking for a little inspiration on what you should serve along with these ribs, here are a few suggestions that my family likes to pair them with!

Leftover Ribs:
Make sure that the ribs that you want to store as leftovers, have cooled down to room temperature before storing.
Then once cooled, place your leftover ribs in an airtight food-safe container in the fridge for up to 2-3 days.
Reheating Instructions:
To reheat these ribs, remove them from the refrigerator, wrap in tin foil, and place on a baking sheet.
Warm in your oven that has been preheated to 300*F for 4-6 minutes, or until warmed to your liking.
Then enjoy again!
