Is this fried chicken really gluten-free?
Yassssss! Yes. It really is.
All of the ingredients including the outer breading coated before it's fried is gluten-free. The Argo® Corn Starch is gluten-free and the cassava flour is naturally gluten-free as well. You just need to make sure that the chicken spice mix that you pick up and use is gluten-free. Then you'll be all set!
What makes up the crisp coating of these pieces of fried chicken?
It is a combination of 50% corn starch and 50% cassava flour, with a little sprinkle of chicken spice and egg to get the coating to hold while being fried quickly.
What type of gluten-free flour should I use?
I would recommend only certain gluten-fre flours for this recipe. You will want to use a flour that is very fine in texture so that the coating, once fried, has the consistency of a normal breaded and fried piece of chicken.
If you don't use a finely ground flour type (ex. almond flour) you will end up with a chunky breading that is crumbly and has a grainy texture. You don't want that.
So you will want to look for either cassava flour or chickpea flour.... tapioca flour would be your third best option if you do not have access to cassava or chickpea flours in your area.
What gluten-free corn starch do you recommend?
I have always used Argo Corn Starch and its many uses in my kitchen. It is the leading corn starch brand with over 100 years of quality and trust over multiple generations and is naturally gluten-free (it even says so on their latest stay-fresh containers!).
It's what I consider the secret ingredient in this recipe. It's what makes this gluten-free fried chicken have the crispiest most-perfect gluten-free coating you will find.
There are many uses of Argo Corn Starch besides creating the crispiest fried chicken with its beautifully browned exterior while sealing in the juices of the chicken in the interior. It's often used as a thickening agent for sauces and soups and is commonly used for stir-fries.
What ingredients do I need to make this fried chicken?
You need just a few simple ingredients. I've listed them below:
- ½ cup Argo® Corn Starch
- ½ cup cassava flour
- 3 tablespoon gluten-free chicken seasoning
- ⅛ teaspoon salt
- 1.5 eggs, beaten
- 3-4 medium to large boneless, skinless chicken breasts cut into tenders
- Corn oil for frying
How do I make this gluten-free fried chicken?
It's simple! You'll need to get out 2 medium-sized bowls, a wire rack, and a deep frying pan or wok.
- Place the beaten egg in a medium bowl with the chicken seasoning. Stir and then set aside. In another medium bowl, combine the corn starch, flour, and salt together.
- Submerse each chicken tender in the bowl with the egg, making sure all sides are coated in the beaten egg. Immediately place each tender in the bowl with the flour mixture and flip each tender around in the flour until thoroughly coated. Remove each tender from the flour bowl and place on a wire rack for 5 minutes while you heat up your deep frying pan with your corn oil over medium to medium-high heat.
- Once your frying pan or wok full of oil is heated, drop 2-3 tenders into the oil and allow to quickly fry. Depending on how hot your oil is and how big and thick your tenders are, your tenders will likely take around 5-8 minutes to properly cook and brown, reaching an internal temperature of at least 165*F.
- After your chicken tenders have cooked and are golden brown on the outside, remove the tenders from the hot oil carefully and place on a wire rack to cool. Consider placing a paper towel underneath the wire rack to catch any falling drops of cooking oil that is still on the chicken for easy clean up. Allow to cool for 3-5 minutes and enjoy!
