These pumpkin gluten-free pancakes with easy pumpkin spice frosting make for one spectacular breakfast!  Fluffy and moist pumpkin pancakes are topped with a 2-minute sweet and creamy pumpkin spiced frosting that you’ll want to dollop on everything!

Pumpkin Gluten-Free Pancakes with Pumpkin Spice Frosting

Fall is almost here and that the holidays are right around the corner!  Therefore it’s not too early to be talking about, dreaming of, and eating everything PUMPKIN like Pumpkin Pecan Truffles!  So this past weekend I woke up early to try to surprise the hubby with coffee and pancakes.  The surprise part didn’t quite work but the coffee and pancakes part did.

Pumpkin Gluten-Free Pancakes with Pumpkin Spice Frosting

I made these fluffy and moist pumpkin gluten-free pancakes and dolloped on a creamy pumpkin spice frosting (and maybe silently scarfed a spoonful or two more of the frosting before the pancakes were ready) that just slowly melted into the tops of these warm addicting pancakes.  No butter or syrup needed here!

I used International Delight® Pumpkin Pie Spice Coffee Creamer for both the pumpkin gluten-free pancakes and for the pumpkin spice frosting.  Not only is this creamer a delicious addition to your morning cup of coffee, but now you can incorporate it into other parts of your morning, including your breakfast.

Pumpkin Gluten-Free Pancakes with Pumpkin Spice Frosting

These pumpkin gluten-free pancakes with easy pumpkin spice frosting make for one spectacular breakfast! Fluffy and moist pumpkin pancakes are topped with a 2-minute sweet and creamy pumpkin spiced frosting that you'll want to dollop on everything!

Ingredients

  • FOR THE PUMPKIN GLUTEN-FREE PANCAKES:
  • 1/4 pumpkin puree
  • 5-7 TBSP International Delight® Pumpkin Pie Spice Coffee Creamer
  • 1 TBSP coconut oil melted
  • 3 eggs
  • 1 TBSP honey
  • 1.5 tsp vanilla
  • 1/4 cup coconut flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/8 tsp nutmeg
  • FOR THE PUMPKIN SPICE FROSTING:
  • 8 TBSP unsalted butter room temperature
  • 4 cups confectioners sugar
  • 3/4 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/8 tsp nutmeg
  • 3-4 TBSP International Delight® Pumpkin Pie Spice Coffee Creamer

Instructions

  1. In a mixing bowl combine all the dry ingredients and in a second mixing bowl combine all the wet ingredients. Then add the dry ingredients into the wet ingredients and mix well. Allow to sit for 5 minutes (so the coconut flour can expand).
  2. While the batter is "sitting" you can make your pumpkin spice frosting (see "notes")
  3. Heat a large nonstick skillet over medium heat coated with nonstick cooking spray or coconut oil.
  4. Pour 1/4 cup fulls of the batter into the warmed skillet and cook for 2-3 minutes or until the underside of the pancake is a nice golden brown. Flip the pancake and cook the other side for another 2-3 minutes. Repeat for the rest of the batter, top with the pumpkin spice frosting, and sprinkle on extra confectioners sugar or walnut crumbles. Enjoy!

Recipe Notes

FOR THE PUMPKIN SPICE FROSTING:
-Whisk the room temperature butter on high with a mixer until fluffy and whipped.
-Add in the sugar one cup at a time while continuing to whisk. Add in the nutmeg, pumpkin pie spice, and cinnamon.
-Add in the International Delight® Pumpkin Pie Spice Coffee Creamer one TBSP at a time until the desired thickness of frosting is achieved.

I also grabbed International Delight® Chocolate Hazelnut Coffee Creamer while I was at Walmart for our morning jo and am thinking up recipes to use it in as well.  It’s a great way to make our morning cup of coffee holiday-perfect too.
