Well well well, welcome back Monday.
Weekends are just too short, especially in the summer.
Agreed? Agreed.
With summer halfway gone and no real solution on how to slow it down {wouldn't year-long summer be great?} I am gobbling up {pun intended} any and every summer recipe I can find time to make.
This here Cucumber Salad Pizza is one of those well-intentioned recipes. By well-intentioned, I mean one night I meant to put zucchini slices on my pizza and realized I had put cucumber slices on it only after taking my first huge bite snarfing down an entire slice.
The intention was zucchini, the end product was something fresh and crisp, light and almost sweet.
This cucumber was amazing on pizza!
Then I started brainstorming....
How could I make my normal pizza, with this new mistaken addition even better?
Shoot... I might as well add the rest of a dang cucumber salad on it and see how she goes!
Sure enough, it was fantastic y'all!
Cucumber pizza pairings:
We like to pair this cucumber pizza with a helping of Air Fryer Asparagus or Sriracha Mayo Broccoli greens.
Oh yeah, and a delicious glass of wine!
Cucumber Pizza Ingredients:
- one 10-oz. gluten-free pizza dough, prepared according to the recipe's instructions*
- ½ cup pizza sauce**
- 1-2 cups freshly shredded mozzarella cheese, depends on how cheesy ya like your pies
- ½ medium cucumber, diced
- ¾ cup grape tomatoes, halved
- 1 jalapeno, deseeded and diced
- ¼ cup red onion, diced
- ¼ cup fresh feta crumbles
- 1 teaspoon of equal parts: oregano, basil, garlic powder, onion powder, and cracked pepper.

How to make pizza with cucumber:
- Preheat your oven according to your pizza dough instructions.
- Prepare your pizza by adding the pizza sauce, then the mozzarella cheese, then the veggies and feta cheese, and lastly, the seasoning.
- Bake according to pizza dough instructions. Serve it hot and enjoy!
How to store leftover cucumber pizza:
You can place your cooked and cooled-to-room-temperature pizza in an airtight container in the fridge for up to 3 days.
How to reheat leftover cucumber pizza:
To reheat your pizza, simply put your pizza on a baking sheet and place in a heat oven at 300*F for 5-10 minutes or until the pizza is warmed to your liking.
