One of my households most commonly-eaten dishes is blackened chicken served along with roasted seasoned vegetables, 95% of the time that vegetable is perfectly tender broccoli florets. I’ll cut up large heads of broccoli, drizzle them in oil and some last minute spices that I can find in my pantry and then pop them in the oven.

Lately our little family has started talking about jumping on the old bandwagon so many are already on, the Meatless Monday bandwagon. Having one day a week were we are fueling our bodies with plant-based food options and leaving those blackened chicken breasts that we normally pair with our roasted veggies, in the rotation to make later in the week.

But I always have requests to keep on making those roasted veggies in the oven. Every. Single. Time.

Why?

Well they are delicious every time. But what if I told you that I have found an even easier way of getting those big bites of deliciously roasted greens into your family’s belly? I have found a fix to when you want those roasted veggies from the oven on your plate but you don’t have the time or want of prepping it all together.
