Easy Grilled Marinated Potato Skewers:
Wow! Do I have a treat for you today! The first time I tried this recipe out, I was very skeptical that it would work.... and it didn't.
The taste - phenomenal! The problem was was the evenness of the grilled potatoes.
Since my first attempt at this recipe I have mastered the incredibly easy technique of putting the potatoes on the skewers in a way that they cook evenly and perfectly.
With my easy to follow tips, you will have marinated potatoes on fun skewers with a crunchy outer coating and perfectly warm and tender-delicious on the inside!
These are fun for kids - well, because SKEWERS!
And adults like them just as much because of the warm bites of garlicky potatoes with the perfect amount of crunch all wrapped up in a fresh new potato recipe!
Oh and did I mention how insanely easy these are to make??? Cuz they are!
They are totally addicting for the whole family!
Marinated Potatoes Ingredient List:
- russet or yukon gold potatoes, sliced into 1" slices or "coins"
- Mazola Corn Oil
- ground cumin
- garlic powder
- salt and pepper
- plus gf breadcrumbs (as optional)
Why Mazola Corn Oil?
Mazola Corn Oil has a high smoke point (450˚ F), great for grilling and stir frying at high temperatures.
Mazola Corn Oil is an all-purpose, cholesterol free cooking oil that is smart heart-heathy choice for your family.
Variety of uses include baking, grilling, sautéing, stir frying, or mixing up a marinade or dressing.
I also find it very easy to find at many local grocery chain stores and online and it one of the more affordable options for my family!
Simple Directions:
- Mix Mazola Corn Oil, salt and pepper, cumin, and garlic powder in a large mixing bowl and add the potato slices, stir, cover with plastic wrap, and chill in the fridge for 30 minutes- 3 hours.
- Place potato pieces on kabob sticks with the flat sides available to contact the grill slats (see the pictures in this post to view how to best place potato pieces on the skewers) and heat grill over medium heat, no more than 400*F. Sprinkle kabobs with breadcrumbs just before putting on the grill.
- Grill first side for 15 minutes, flip over to other side, sprinkle with a bit more of the breadcrumbs, and grill for another 15 minutes or until your desired crispness is achieved.
How to Place Potatoes on the Kabob Skewers:
There is definitely a right way to put your potatoes on their kabob skewers and then there's a harder way. Let my mistakes be my mistakes and you just by pass them by m-kkk?
Let me share what I've learned about placing the potatoes on skewers.
For best results on the grill, you want to make sure that the potatoes have as much surface area touching the grill as possible to ensure that your potatoes grill in a timely manner and are cooked evenly throughout.
To do this, place the potato "coins" on the skewers so that the flat ends of each coin can touch the grill surface.
So that means that when you are piercing the potato coins, your kabob sticks will be piercing the area where the skin is still on the potato, not the cut sides of each potato coin.

Recipe Pro Tips:
Submerge your wooden kabob skewer sticks in a bath of water for 30 minutes prior to placing the potatoes on the sticks.
This will help your kabob sticks from burning on the grill!
If you are using metal skewers like I did in these photos, then you do NOT need to submerge your sticks in water for 30 minutes.
Storing Leftovers:
Store your leftover potato skewers in an airtight food-safe container once they have cooled down to room temperature. Place this airtight container in the fridge for up to 3 days.
To reheat your potato kabobs, preheat your oven to 325*F or place your potatoes in your air fryer at 325*F with the kabob sticks or skewers removed.
Cook your chilled potatoes for 4-7 minutes, or until they are warmed to your desired temperature for a second round of enjoyment!
