Best Barbecue Pineapple Chicken Kabobs!
Y'all! Do I have a good one for ya!
The family and I had a craving for chicken kabobs this past weekend.
Okay, so confession time: we wanted to grill something with adult beverages in hand and I specifically wanted to have something easy and quick to prepare and something that wouldn't heat the house up since it was 98,588,348 degrees outside.
We also wanted some bacon. So we combined the bacon, pineapple chunks, kabob vegetables, and some barbecue sauce.
I am pretty sure that these Spicy Barbecue Bacon Chicken Kabobs were gone within 60 seconds.
I mean, we were hungry, but, these dang kabobs are the bomb! Oh my goodness!
It's always a good day when the family decides it's a day that there is going to be grilled BBQ bacon in the house, so of course we had to try it in our kabobs too.
Ingredient List:
- 4 strips of thick-cut bacon
- 4 chicken breasts, cubed
- 2 bell peppers, sliced into 2-inch squares
- 1 sweet onion, sliced into 2-inch squares
- 1 cup Gluten-free barbecue sauce*
- 1 teaspoon crushed red pepper flakes
We added a little spice to the mix with a quick shake of the crushed red pepper flakes bottle, and some crispiness with some fresh bell peppers and sweet onion.
I love using this BBQ glaze for the barbecue sauce, but in a time crunch, I like to use this BBQ sauce which you can find at most chain grocery stores.
Simple Directions:
- Cook the bacon until it is halfway to fully cooked (We bake in the oven at 350*F for about 10 minutes).
- Place the chicken, bell pepper, pineapple, and onion pieces onto kabob sticks, interweaving one bacon slice in between the other pieces on each kabob stick.
- Using a basting brush, brush on the barbecue sauce and place on the grill over medium heat. Continuously turn the kabobs until the chicken and bacon is cooked thoroughly, about 15-20 minutes, depending on your grill.
- Sprinkle the cooked kabobs with the crushed red pepper flakes or fun crunchy sesame seeds and enjoy while still warm!
The key is to cook the bacon until it is halfway done (that way the strips are still pliable enough to ribbon through the kabobs, AND that the grease from the bacon is limited, decreasing the chance of grill flare-ups and burnt kabobs) before putting the kabobs together!

Recipe Pro Tips:
The crushed red pepper flakes and crunchy white or black sesame seeds as a garnish are optional.
If you like a little extra added spice or crunch, consider one or both of these toppings.
Grills vary widely.
Our Kamado Joe Grill is AMAZING and perfectly cooks these pieces of chicken and vegetables to tender, juicy bites of heaven in roughly 15-18 minutes, flipping every 5 minutes or so.
But your grill may vary from ours, so just make sure that you flip (and rebrush the kabobs with BBQ sauce) every once in a while and that the internal temperature of the chicken reaches 165*F for you think about taking it off the grill.

I have had these babies for years and they have held up amazingly well.
Did I mention that they are dishwasher safe too!
They are perfect to curve around the edge of a plate, or twist to shape on a smaller grill.
What to Pair with These Skewers:
Well, since this dish is meat and veggies all rolled into one, we like to pair our chicken pineapple skewers with a nice carb side, like our Pressure Cooker Quinoa, Fluffy Brown Rice, or Easy Instant Pot Jasmine Rice!
How to Store Leftover BBQ Pineapple Chicken:
You can store your leftover BBQ Chicken Skewers in a food-safe air-tight container in the fridge for up to 2 days.
Make sure that your leftovers have fully cooled down to room temperature before placing them in the container to cool.
It may be easier to store your leftover kabobs with the meat and vegetables taken off their respective sticks.
Reheating Leftovers:
To reheat these leftovers, remove the chicken and vegetables from their sticks and set the stick aside of you have not yet removed the dish from their skewers.
Place the leftovers in a microwave-safe dish or plate and cover the dish so that the hot air can still easily escape.
This top or cover will help prevent splatter in your microwave.
Microwave on high power for 45-90 seconds depending on how hot you like your leftovers and how much you are reheating at one time.
