We don't know about you, but we love English muffins! So when we got our hands on these gluten-free muffins, we were celebrating at home. This gluten-free English muffins recipe is very easy to make and just as good as the classic muffins, you can try it with your eyes closed.

Ingredients:
- 2 + ½ Cups Gluten Free All-Purpose Bread Flour
- 1 tablespoon sugar
- 1 ⅔ teaspoon instant yeast
- 1 Cup + 2 tablespoon warm milk
- 1 ¼ Cups warm water
- ¾ teaspoon baking powder
- ¾ teaspoon salt
Directions:
Step 1: In a large bowl, add the flour, sugar and yeast. Whisk to combine. Add milk and water and mix well until creamy consistency is formed.
Cover with oiled plastic wrap and set aside to rise for about 30 minutes, or nearly doubled in size.
Step 2: Place a 10-inch cast iron skillet over low heat. While the pan is heating, grease four metal English muffin rings and place them in the hot pan.
Step 3: In a separate, small bowl, whisk together the baking powder and salt. Uncover the bowl of dough and mix in the baking powder and salt. Fill the English muffin rings about three-quarters of the way full with the dough. Cook for about 5-7 minutes or until golden. Use tongs or a spatula to flip the rings with the muffins inside and cook for another 5-7 minutes or until the underside of the muffins is lightly golden brown.
Step 4: Remove from the rings and serve these super fluffy muffins with butter and your favourite jam. Enjoy!
