This easy fall-flavored baked brie recipe creates warm melty gooey cheese and mixes it with a quick and thick buttered pecan and honey sauce, all sprinkled in rosemary and thyme leaves!
It takes only minutes (17 minutes from start to finish to be exact!), but the cravings for more will stick with you for a lot longer! It's the perfect warm appetizer to impress at parties and snack on during the latest sport game with your favorite refreshing drink!

Perfect Pairings:
This fall brie recipe pairs perfectly well partnered right next to seasonally fresh fruits, such as apples, grapes, and even pears!
I've been diggin on Bud Light Seltzer lately (especially the Black Cherry flavor - oh my goodness!).
The light and sweet hints from these drinks are the perfect twist that compliments this baked cheese so well, not to mention they are only 100 calories, a 5% ABV, and less than one gram of sugar!
Ingredients:
- 1 8-ounce wheel of brie cheese
- 1 Tablespoon butter
- ½ cup chopped pecans
- ½ cup honey
- 2 ½ teaspoons fresh chopped rosemary and/or thyme
- salt and pepper to taste
Simple Steps:
- Preheat your oven to 350*F. Place the wheel of cheese in the middle of a four-sided baking dish and cook for 12-14 minutes. Remove from heat and let sit for 5 minutes to cool a bit.
- While the brie is cooking, make the pecan and honey sauce. Melt the butter in a small saucepan over medium-low heat and add the pecans. Allow the pecans to cook for 5-6 minutes, until they have softened and become fragrant.
- Add the honey, fresh chopped herbs, and salt and pepper, stir, and allow to heat until it starts to bubble. Remove from heat.
- Once the cheese has set to cool for 5 minutes, spoon the honey pecan sauce overtop the brie and serve while still warm.
Recipe Tips:
My biggest tip that I have learned while making this recipe a bazillion times, is making sure to allow the brie to cool for 5 minutes.
This is important so that no one burns their mouths on the hot cheese.
However, this 5 minutes of cool down is important if you want to move this cheese from the baking dish to a serving platter or party dish.
Moving too soon will leave the dish too hot and you might be moving a gooey mess.
5-minutes of patience will pay off with this one!

If honey isn't your thing, try swapping the delicious warm honey for sweet maple syrup!
If you are fan of walnuts over pecans, swap the nuts in a 1:1 ratio.
What about the sweet and spicy fans out there? Well, y'all are in luck with this recipe. I love to add a healthy sprinkling of crushed red pepper flakes into the honey sauce at the same point in the instructions as when you are adding the salt and pepper.
The pepper flakes add just the right amount of spice. I usually will add about ½ teaspoon to make sweet and spice version of baked brie.
