Ooey gooey melty cheesy with no strings attached {as in no dirty dishes to clean!}. What else do I gotta say {she drops her mic, brushes her hands off, turns around and walks away}. These simple and tasty potato slices are tossed in a layer of cheeses and sweet onion, sprinkled in paprika, parsley, and some “heat”, loaded onto some tin foil and kissed on the grill till tender; crispy on the outside, and melty everywhere else. If stringy melty cheese gets to your heart, you will easily fall in love with these easy sizzlin’ campfire taters.
Whoa yo! This past weekend went by waaaay too fast. The Hubster and I went on another road trip to visit my best friend at her summer cottage and had a weekend of boating, fishing, sunset-watching, and a lot of really really good eating. Our last night there, we had some amazing grilled meats and some delicious cheesy potatoes that reminded Hubby and I of our previous camping road trip just weeks before, where we grilled up these amazing campfire taters.
These look and taste fancy and all, but they aren't. A few simple ingredients were packed in our camping gear like potatoes and a sweet onion, cheeses and some delicious spices, and with a few quick minutes of easy prep work, the grill did the rest! {easy peasy nice and cheesy} The hard part is letting it cook and having to sit and smell it {#torture #TheStruggleIsReal}.
Campfire Taters
Ingredients
- 1 ½ tablespoon olive oil
- 3 medium potatoes, thinly sliced
- 1 medium sweet onion, sliced
- ¾ cup of shredded cheese, sharp cheddar or colby-jack is perfect!
- 1 teaspoon Paprika
- 1 teaspoon crushed red pepper flakes (optional, for spiciness)
- 1 tablespoon parsley, chopped
- salt and pepper to taste
- tin foil
Instructions
- Preheat your grill over med-high heat.
- Place a large piece (about the size of a baking sheet) of tin foil on a flat surface. Drizzle the foil in the olive oil.
- Combine all other ingredients on the middle of the tin foil and mix thoroughly.
- Place a second piece of tin foil (same size) on top of the potatoes and pinch the upper and lower foil pieces together with your fingers.
- Tear a small hole in the very top of the foil to use as a steam vent.
- Grill the foil packet for 20 minutes, or until the potatoes are tender and cheesy. Enjoy it mesy!

I think I could eat that entire pan of cheesy potatoes by myself. Adding the red pepper flakes balances the richness of the cheese. Spicy potatoes and cheese go together like peas and carrots, except they taste better. Yum!
