So yes, this sounds delicious, right?!? It's about as easy as you can possibly get and that's why I love it. I NEED as many easy and simple and quick recipes as possible for my attention span.
So I kinda stole this recipe idea from my brother.
Sorry Bri! He had this amazing garden growing in Minnesota when I went to visit him one year and he made this spicy thai cucumber salad that just set mind my ablaze.
I am not sure what ablaze really means but it sounds about right because this cucumber salad is hot and spicy.
But the sweetness and the tanginess from the sugar and vinegar tone it down to the perfect level.... unless you can't stand heat at all. Then I recommend "x"-ing the jalapenos a bit.
And by 'a bit' I mean all together.
Don't let all the greenery fool you.
This salad is not tame. Not tame at all.
It's packed with nutrient-dense veggies and a hella lot of flavor.
So buckle up for this one.
Easy Spicy Thai Cucumber Salad

This easy spicy thai cucumber salad is sweet and spicy, tangy and smooth, simple and healthy. It hits all the right spots with all the right flavors and takes less than 5 minutes to make!
Ingredients
- 2 cucumbers, sliced and the quartered
- 2 jalapeños, de-seeded and diced
- ¼ cup fresh cilantro
- 1 cup sugar snap peas, cut into halves
- 1 green bell pepper, de-seeded and diced
- ½ raw sugar
- ½ cup white wine vinegar
- 1 tablespoon lime juice
- salt to taste
Instructions
- Whisk together the vinegar and sugar until the sugar is dissolved.
- Combine all other ingredients (except almond slices) in a large bowl.
- Toss the veggie mix with the vinegar mixture until evenly coated. Let chill in refrigerator.
- Once ready to serve, sprinkle with more cilantro and ENJOY y'all!
