As I write this recipe here in November, I am discovering that November is Gluten-Free Diet Awareness Month.
Every day is gluten-awareness day/week/month for me. That’s my reality.
But what better way to kick off the celebrations that with a gluten-free sweet treat!
This sweet treat is a deliciously easy fudge topped with another one of my sweet favorites, PEBBLES™ cereal to give the fudge a pop of color, texture, and another dimension of flavor!

Let’s discuss this fudge:
The best vanilla white chocolate fudge is the kind that is perfectly sweet. It’s sweet enough to appease your sweet tooth but not too sweet that you can only have that first bite before your teeth start to hurt.
The best white chocolate fudge is equal parts hints of chocolate and hints of vanilla.
The best fudge is amazingly moist and almost doughy. Every bite is soft. Every morsel is tender.
Is fudge gluten-free?
This white chocolate fudge definitely is!
Many types of fudge are gluten-free. I have also seen fudges full of gluten.
The key is to make sure that your ingredients are all gluten-free, including your cream cheese.
Gluten-Free Fudge Ingredients:
- 1 8oz. brick of regular cream cheese, room temperature
- 10oz. white chocolate baking bar
- 3 ¾ cups powdered (confectioners) sugar
- 1 tablespoon vanilla extract
- 1 cup Fruity or Cocoa PEBBLES™ cereal (don’t worry, they’re gluten-free!), divided

How to Make White Chocolate Fudge:
- Place the room temperature cream cheese, powdered sugar, vanilla in the bottom of your stand mixer or in the bottom of a large mixing bowl with a hand mixer. Mix on low until smooth and well combined.
- Melt the white chocolate according to package instructions and empty the melted white chocolate into the mixing bowl and mix on low until smooth and well combined again.
- Crush ½ cup of PEBBLES™ cereal up and fold it into the fudge mixture until evenly combined. Place the fudge mixture into the bottom of an 8 x 8 tin foil and cooking spray lined pan. Top the fudge with ½ cup of PEBBLES™ cereal and gently press the cereal pieces into the top of the fudge to make it stick.
- Place the fudge in the refrigerator for 1-2 hours until hardened. Remove the pan of fudge from the fridge, slice into squares and devour!
What type of pan to use?
I like to use an 8″ x 8″ baking pan with tin foil and cooking spray in the inside or a mini muffin tin covered in cooking spray.
I have used a bit larger of a baking pan, a 9 x 9 inch pan. In this case, the fudge squares turned out thinner AND it didn’t take nearly as long for the fudge to harden.
Just keep in mind that a small difference in pan shape could mean a big difference in the overall finished fudge product and no option is wrong. It just depends on your fudge preference!
How to store leftover vanilla white chocolate fudge:
You can store any leftover white chocolate vanilla fudge in an airtight container in the fridge for up to a week or an airtight container in a room temperature environment for 3 days.
You can also freeze fudge in your freezer. Simply wrap the sliced fudge in plastic wrap snuggly and then place in a sealed plastic bag. place it in the freezer for up to a month or two. When you are ready to eat the fudge, take it out of the freezer and allow it to come to room temperature or fridge temperature while the fudge is still inside the sealed plastic zippie bag.
White Chocolate Fudge Pro Tips:
Use high quality white chocolate bars or melts. It is easier to melt and much easier to work with!

Instructions
- Place the room temperature cream cheese, powdered sugar, vanilla in the bottom of your stand mixer or in the bottom of a large mixing bowl with a hand mixer. Mix on low until smooth and well combined.
- Melt the white chocolate according to package instructions and empty the melted white chocolate into the mixing bowl and mix on low until smooth and well combined again.
- Crush ½ cup of PEBBLES™ cereal up and fold it into the fudge mixture until evenly combined. Place the fudge mixture into the bottom of an 8 x 8 tin foil and cooking spray lined pan. Top the fudge with ½ cup of PEBBLES™ cereal and gently press the cereal pieces into the top of the fudge to make it stick.
- Place the fudge in the refrigerator for 1-2 hours until hardened. Remove the pan of fudge from the fridge, slice into squares and devour!

Use high quality white chocolate bars or melts. It is easier to melt without causing a lumpy mess and it's much easier to work with!
