Fresh creamy strawberry mango ice cream with hand picked strawberry pieces and puréed mango folded in. Ten minutes of prep work and a hand mixer is all that you need to prepare this light, sweet, refreshing treat for those long dog days of summer!
We are now entering the dog days of summer. It's hot out. It's sticky. It's humid. What could be more dang refreshing on a hot summer day than a bowl full of cold sweet ice cream full of freshly picked fruit?!?
What if I told ya that the fruit combo I was referring to was strawberry and mango? Heck yes. Now THAT sounds damn refreshing!
So here's the scoop: ya pick out the freshest strawberries you can find and chop 'em up. Then you find the best ripe mango you can and ya purée the crap out of it. Then ya prepare your ice cream base and mix in your fruit. How easy is that y'all? {puts her hands up in the air and then doesn't know what to do from there}
Strawberry Mango Ice Cream
Ingredients
- 1 ¾ cup heavy whipping cream
- 1 14 oz . can sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 in ripe mango, pureed smooth a food processor
- ¾ cup fresh strawberries, chopped
Instructions
- With a hand mixer, whip the heavy whipping cream until it thickens and fluffy peaks appear, approximately 5 minutes.
- Carefully fold in all the other ingredients. Place in a freezer-safe dish and freeze for 4-6 hours or until the ice cream is completely frozen through.
- Enjoy it messy!
