Happy monday friends! It's back to the monday grind. After taking a few weeks off to be with my family after my father unexpectedly passed away, it feels good to get back in the kitchen. Cooking is stress relieving to me. It's healing. Maybe I am weird. Very very likely.
It also feels weird to be back in the kitchen because in the middle of the chaos the last week shoveled out to us, we also moved from our townhouse to our dream southern horse farm (in disguise - it needs some work!). So my awesome MIL thoughtfully unpacked my new big, bright kitchen for me while I was away. And I LOVE it (an understatement) but I am still getting used to where the cups are, how the oven cooks, and figuring out if I had combined both paprika shakers together before I left town (seriously, where did that second shaker go?). I should really do a post on new house kitchen cooking fails (starting with burnt cookies).
Right now comfort foods are all the rage with my frazzled mind. And carbs. Carbs are my friend right now always. And that's okay. Especially when the carbs are part of this spicy lemon honey hot chicken pasta dish! The pasta is coated in a sweet and spicy lemon honey sauce with chili pepper, butter, and garlic tagging along for the ride. Then it is topped with my most favorite Gluten-Free Baked Hot Chicken, which is the best breaded chicken I have ever had with it's spicy and crunchy outer goodness and inner juiciness. It's truly the best combination for a light and fresh Spring pasta dish that compliments the temps as they start to warm up!
Spicy Lemon Honey Hot Chicken Pasta
Ingredients
- 4 pieces of BHHY's Hot Chicken
- 1 bell pepper, sliced
- 1 cup snap peas
- 1 cup of sweet corn kernels
- 1 tablespoon minced garlic
- 2 tablespoon olive oil
- 1 slices lemon, cut into
- 12 oz of GF pasta
- 3 tablespoon butter
- 2 tablespoon fresh honey
- 1 teaspoon garlic powder
- parsley for garnish
Instructions
- Follow instructions for the Hot Chicken. While the Hot Chicken is baking, cook the pasta according to package instructions.
- While the pasta is cooking, add the olive oil and minced garlic to a skillet over medium heat. Once hot, add the bell pepper, snap peas, and corn. Cook until the veggies start to become tender. Once the veggies become tender, squeeze ⅓ of the lemon over the skillet and drop the rest of the lemon into the skillet as thin slices and allow to continue cooking with the rest of the veggies.
- Once the noodles are done, drain them, add the butter and honey and stir until the butter is melted and mixed. Add the garlic power to the noodles, stir, and then add the noodles to the warm veggies.
- Place your hot chicken over your pasta a nd veggies and garnish with fresh parsley.
