This (gluten-free) spicy cajun chicken pasta combines heat, tender protein, and a creamy cajun pasta sauce into one dish. It's a spicy, creamy, and oh so delicious one-pot meal in under 30 minutes!
Happy Labor Day! We spent a good amount of time last night outside, enjoying our Labor Day on the deck. What else are long hot holiday weekends for? Sun-searchin, grub-grabbing, and house projects.
After an afternoon of picking out floor tile {"they all look the same" as she gives out a wide-eyed blank stare}, going to too many stores with all the other holiday sale shoppers {it sounded like a great idea on paper}, and not eating any lunch {plus the fact that I had one too many long island iced teas the night before... urg... how did I survive my twenties? #MyBrainHurts}, the Hubster and I were ready to sit back, carb-up, and have our own little date night while a cool breeze came in to town. Oh how I love late summer!
The creamy pasta sauce in this spicy cajun chicken pasta will perk up anyone with a headache. Add in some sauteed cajun chicken breasts, zesty Rotel tomatoes, gluten-free elbow noodles, and you have yourself a hangover cure! It's creamy, it's hardy, and it's a less than 30 minute one-pot meal! Score!
Spicy Cajun Chicken Pasta
Ingredients
- 4 tablespoon cajun seasoning, read "notes"
- 4 chicken breasts, cubed
- ½ medium sweet onion, diced
- 2 tablespoon coconut oil, or other oil you have on hand that you like to saute with
- 16 ounce package of GF elbow noodles
- 1 can Rotel tomatoes, we get the "hot" variety
- ½ cup parmesan cheese, shredded
- 2 cups milk, we do the skim thang
- 2 cups heavy whipping cream, oh but it's worth it!
Instructions
- In a large pot, cook the noodles according to package directions. Drain and set aside.
- In the same pot that you cooked the noodles in, saute the chicken and onion in the 2 tablespoon oil and 2 tablespoon of the cajun seasoning until fully cooked. Add this to the noodles that were set aside.
- In the same pot that everything else has been cooked in, add the milk, heavy cream, and 1 tablespoon cajun seasoning together and bring to a boil and allow to simmer until it starts to thicken.
- Add the noodle-chicken mixture back to the pot with the simmering milk, add half the cheese and the Rotel tomatoes, and allow all to cook together until desired sauce thickness (I cook mine for about 10 minutes here) occurs.
- Serve while still warm, and sprinkle with remaining cheese and 1 tablespoon cajun seasoning. Enjoy it messy!
Notes
Cajun Seasoning:
Combine 2 tablespoon garlic powder, 2 tablespoon paprika, 1 tablespoon salt, 1 tablespoon black pepper, ! tablespoon cayenne pepper, 1 tablespoon oregano, 1 tablespoon onion powder, and ½ tablespoon dried thyme together. You will have left over spice mix after using this concoction in the Spicy Cajun Chicken Pasta recipe.
And if you are wondering... no I am not a bada$$ and drinking through a hangover... no that is not wine in that wine glass of mine...it's plain iced tea. Last night was way too recent to be sipping on alcohol for this girl {plus I gave up Long Island Teas a long time ago.... like at least 12 hours ago}.
