I know what you are probably thinking... this recipe has a super long name and ya just named it by naming off all the ingredients.
Yes, yes I did.
I didn't know how or what to name this one-pot wonder that fully described it in all of it's deliciousness for you.
So I just named off ingredients in the recipe and stuck with it. I'm guilty.
This recipe really doesn't need too much of an introduction or an explanation from me on why you need to try this recipe... but I'll give you a few reasons anyways!
Because I love you and I know you are going to love this dish {reason number one!}.
Reason number two: it's a one-pot 30-minute meal. So now you have an excuse to make this on any busy weeknight when you are already starving and want to be in front of the couch and not washing up a bunch of dishes {ahem....I am currently couching-it and it feels wonderful}.
Reason number three: goat cheese. GOAT CHEESE!!!!
Reason number four: The pasta sauce is thick, it's creamy, it's cheesy, it's full of herbs and spices. I would go ahead and tell ya that it's down right bold in flavors. Yep, I can almost taste that garlicky goodness right now!
Anyone have any ideas on a better name for this meal??? I am completely up for recommendations on this one! I need your help! TIA! Now I am going back to eating this delicious meal on the couch 🙂
Goat Cheese Pasta Ingredients:
- 1 package gluten-free pasta
- olive oil, divided
- 4 chicken breasts
- gluten-free chicken broth
- heavy cream
- goat cheese
- fresh rosemary, chopped
- minced garlic
- spinach leaves
- cherry or grape tomatoes, sliced in half
Skillet Goat Cheese Chicken Pasta Instructions:
- In a large skillet, cook your noodles according to package instructions, usually 6-8 minutes (our noodles take 6 minutes). Rinse with cool water, drain, and stir in 1 tablespoon olive oil immediately to coat. Set aside.
- In the same skillet, add 2 tablespoon olive oil over medium heat. Add the chicken breasts and cook thoroughly. (I get thinner chicken breasts that usually take 9-10 minutes to fully cook).
- Once the chicken has cooked, stir in the chicken broth, goat cheese, and heavy cream. Allow to simmer. Once simmering, add the minced garlic, rosemary, and spinach. Continue to stir and simmer until the sauce reduces (about 10-15 minutes).
- Add in the tomatoes the last 1-2 minutes of sauce reduction. Once the sauce has reduced, add the noodles back into the skillet and mix well. Serve immediately. Enjoy!

The only difference in ingredients/supplies is the amount of chicken broth you will use will be more and that there is no need for the olive oil.
You will need about 2 ¼ cups of broth for your pressure cooker.
Another difference you will notice is that the chicken should be cut into 1-inch cubes so that it can cook faster in the pressure cooker.
Instant Pot / Pressure Cooker Instructions:
- Place the 2 ¼ cups chicken broth in the bottom of your pressure cooker.
- Break the spaghetti noodles in half and place on top of the chicken broth. Press the noodles down so that all noodles are under the broth. You may need to move around the noodles or you can choose to add a Tablespoon or two of extra broth to the mix.
- Sprinkle the minced garlic on top of the noodles, followed by the heavy cream and goat cheese and rosemary, then the 1-inch cubed chicken, and lastly the vegetables on the very top.
- Close up your Instant Pot and cook on high for 3 minutes and then allow your pressure cooker to do a natural pressure release for 5-7 minutes before releasing the rest of the pressure manually.
- Open you Instant Pot up and give the dish a good stir. Remove the chicken pasta from the Instant Pot and place in a large serving bowl.
- Top with any of the suggested garnishes and serve while still warm.
Chicken Goat Cheese Pasta Pro Tips:
Gluten-free pastas can be so hit or miss.
Cooking with gluten free pasta noodles can be tricky - especially with Instant Pot and skillet recipes are concerned.
Look for gluten free pasta noodles that are of high quality.
I highly recommend
If you are worried or questioning whether or not your gluten-free pasta is going to turn out mushy, err on the side cooking too little - meaning I'd rather you undercook the pasta a bit so it's freshly al dente, then having soggy mushy pasta - it happens all too often.
So cook your pasta for a minute or two less if you get worried!
