I am usually gabbing about using fresh and all-natural ingredients and life is good. Life is good, but sometimes you get a hankerin‘ for something and you can’t get it out of your head until you have it. And in my case, until it is in my mouth. Well, today I am a total hypocrite because I am combining some terrible-for-you ingredients together to make one wonderful dessert.
Insert the scotcharoo. My mom has been making these treats since I was a little girl. Holidays, BBQ’s, you name it, they were there, and devoured shortly after arriving. After figuring out my dietary issues, I no longer could eat this delicacy. Nope, nada, can’t do it. Then I recently discovered that Rice Krispies now come in a brown rice, gluten-free variety! So here's a gluten free scotcharoos recipe you can make at home in just 10 minutes!
I can once again enjoy these bad-for-you treats. And here’s the real kicker….Hubby claims that these taste better than the original deal! It may have something to do with the fact that I also add in butterscotch and white chocolate chips to the ever-so-sweet recipe as well. You might as well go all out if you are going to be eating these, am I right?!?

Gluten Free Scotcharoos Recipe Tips
*Make sure when purchasing rice krispies that you are purchasing the gluten-free type, AKA made with brown rice. The common version of the cereal is NOT gluten-free.
Gluten Free Scotcharoos Bars Recipe
Gluten-Free Scotcharoos are a recipe that is great for your summer get togethers, barbecues, and backyard parties. They are easy and cheap too!
Ingredients
- 5 cups GF Rice Krispies*
- 1 cup all-natural peanut butter
- 1 cup light Karo syrup
- ½ cup sugar
- 1 bag (1¼ cups) butterscotch chips
- 1 bag (1¼ cups) semi-sweet chocolate chips
- ½ cup white chocolate chips
Instructions
- In a large sauce pan, heat the peanut butter, sugar, 1 cup butterscotch chips, and Karo syrup on medium heat until melted.
- Add the rice krispies and stir until evenly coated
- Place the rice krispie mixture in a 9 x 13 inch pan lined with parchment paper and press firmly down.
- In a separate container, melt the chocolate chips, white chocolate chips, and ¼ cup butterscotch chips together.
- Place the melted chocolate mixture on top of the krispies immediately. Place the pan in the refrigerator for 1 hour to allow the chocolate to set. Enjoy it messy! These are truly finger-lickin' good!
