Gluten-Free Cheese Stuffed Meatballs

These gluten-free cheese stuffed meatballs are made with warm and juicy pieces of beef, with ooey gooey cheesy centers.  These meatballs take your next spaghetti-and-meatball night up a notch.  These gluten-free bombs are so easy to make with only 5 ingredients and take only minutes to make!

I know that there are a ton of meatballs out in the world {and I’m not talking about the kind who pull out in front of you in rush hour traffic!}.  BUT… not many of them are gluten-free.  So… what does one do on a spaghetti-and-meatball night with no meatballs?  Well, you quickly make them.  And you don’t make just any meatball.  Hell no.  You make ’em cheese filled.

Gluten-Free Cheese Stuffed Meatballs

Yield: 18
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 1 pound ground beef
  • 1/4 cup gluten-free italian-style bread crumbs*
  • 1 egg, beaten
  • inch mozzarella cheese sticks, cut into 1 sections
  • 2 TBSP oil for frying, we used olive oil

Instructions

  1. Place the oil in a large skillet and warm over a medium heat.
  2. In a large mixing bowl, combine the beef, breadcrumbs, and egg together thoroughly.
  3. Form into 18 evenly-sized balls and insert one mozzarella section into the middle of each ball and close the ball back up around the cheese.
  4. Place all meatballs in the heated oil and fry for 8-12 minutes, until the meatballs are thoroughly cooked and browned (some of the cheese may start to seep out of the meatballs).
  5. Place on paper towels or another flat absorptive surface to cool before serving.
  6. Serve with noodles and spaghetti sauce and enjoy it messy!
