Juicy grilled chicken and bacon are paired with fresh pineapple, lemon, sweet onion, and potatoes, drizzled with sweet bbq sauce and some extra spice, and then slipped into some tin foil and kissed on the grill. There's no mess to clean up with this all-in-one meal, no dish that gets dirty, and likely no leftovers because frankly, it is just that dang good.
When I said that this juicy meal is no mess, no fuss kinda deal.... I meant it. Just use yourself a bit good bit of tin foil, grill this masterpiece inside it, and then just toss the crispy foil once you're done.
We even mix our meat and veggies in our BBQ sauce and spices in the foil itself. It saves us dirtying up a mixing bowl.
The only real mess we have when eating these BBQ chicken and pineapple foil packet dinners is the BBQ sauce smeared against our faces. We completely ignore it until well after we are done eating because it is seen as wasting valuable time that could be spent bringing more good bites to our mouths. There's no time to wipe that deliciousness away {overused Sweet Brown quote coming atcha.... because "ain't nobody got time for that!"}.
This easy foil packet recipe is at the top of my "I don't want to clean a single dang dish tonight" list {anyone else have this list? Bueller?}. It's perfect for those busy week nights {or those plain 'ol lazy bum nights...guilty!}.
BBQ Chicken + Pineapple Foil Packet Dinner
Ingredients
- 4 chicken breasts, cubed
- 1 medium sweet onion, chopped
- 6 pieces of thick-cut bacon, chopped into 1" sections
- 2 medium bell peppers, chopped
- 1 medium pineapple, cubed into 1" squares
- 3 slices medium potatoes, sliced into thin ⅛"
- gluten-free BBQ sauce*
- 2 tablespoon coconut oil, any cooking oil will do!
- 1-2 teaspoon crushed red pepper flakes, depending on your spice preference
- 1 slices lemon, cut into thin
- 4 pieces of tin foil, about the size of a cookie sheet
Instructions
- Preheat your grill over medium heat.
- Place one piece of foil on a flat surface. Place half of the chicken, bacon, onion, bell pepper, pineapple, lemon, and potatoes in the middle of the foil.
- Drizzle with 1 tablespoon oil, a decent amount of BBQ sauce and ½ of the red pepper flakes. Mix it all together.
- Use a second piece of tin foil and place on top of the meal, forming it into a "tent" shape and at the very top of the "tent" making a small slit for steam to exit. Press all four sides of the bottom and top pieces of tin foil together.
- Using the other two pieces of tin foil and the other ½ of the ingredients, make a second foil packet the same way as the first (we use two foil packets so that the meat cooks thoroughly and evenly and doesn't take 2 hours to cook).
- Grill both foil packets for 15-30 minutes, or until the chicken and bacon have cooked thoroughly.
- Drizzle with extra BBQ sauce and enjoy it messy!
