Pumpkin Gluten-Free Pancakes with Pumpkin Spice Frosting

These pumpkin gluten-free pancakes with easy pumpkin spice frosting make for one spectacular breakfast! Fluffy and moist pumpkin pancakes are topped with a 2-minute sweet and creamy pumpkin spiced frosting that you'll want to dollop on everything!

Ingredients

  • FOR THE PUMPKIN GLUTEN-FREE PANCAKES:
  • 1/4 pumpkin puree
  • 5-7 TBSP International Delight® Pumpkin Pie Spice Coffee Creamer
  • 1 TBSP coconut oil melted
  • 3 eggs
  • 1 TBSP honey
  • 1.5 tsp vanilla
  • 1/4 cup coconut flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/8 tsp nutmeg
  • FOR THE PUMPKIN SPICE FROSTING:
  • 8 TBSP unsalted butter room temperature
  • 4 cups confectioners sugar
  • 3/4 tsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/8 tsp nutmeg
  • 3-4 TBSP International Delight® Pumpkin Pie Spice Coffee Creamer

Instructions

  • In a mixing bowl combine all the dry ingredients and in a second mixing bowl combine all the wet ingredients. Then add the dry ingredients into the wet ingredients and mix well. Allow to sit for 5 minutes (so the coconut flour can expand).
  • While the batter is "sitting" you can make your pumpkin spice frosting (see "notes")
  • Heat a large nonstick skillet over medium heat coated with nonstick cooking spray or coconut oil.
  • Pour 1/4 cup fulls of the batter into the warmed skillet and cook for 2-3 minutes or until the underside of the pancake is a nice golden brown. Flip the pancake and cook the other side for another 2-3 minutes. Repeat for the rest of the batter, top with the pumpkin spice frosting, and sprinkle on extra confectioners sugar or walnut crumbles. Enjoy!

Notes

FOR THE PUMPKIN SPICE FROSTING:
-Whisk the room temperature butter on high with a mixer until fluffy and whipped.
-Add in the sugar one cup at a time while continuing to whisk. Add in the nutmeg, pumpkin pie spice, and cinnamon.
-Add in the International Delight® Pumpkin Pie Spice Coffee Creamer one TBSP at a time until the desired thickness of frosting is achieved.
