Grilled Marinated Potatoes on Skewers

Addicting Grilled Marinated Potatoes on fun skewers are the quick grilled side dish you have been looking for! Potato slices are marinated in a simple marinade of cumin, garlic, pepper, and Mazola Corn Oil, then sprinkled with breadcrumbs, and kissed on the grill to produce tender warm potato centers with crunchy crisp garlicky outer coating!

Ingredients

  • 4 medium russet or yukon gold potatoes, sliced into 1" slices or "coins"
  • 1/2 cup Mazola Corn Oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt and pepper
  • 1/3 cup gluten-free breadcrumbs (as optional)

Instructions

    1. Mix oil, salt and pepper, cumin, and garlic powder in a large mixing bowl and add the potato slices, stir, cover with plastic wrap, and chill in the fridge for 30 minutes- 3 hours.
    2. Place potato pieces on kabob sticks with the flat sides available to contact the grill slats (see the pictures in this post to view how to best place potato pieces on the skewers) and heat grill over medium heat, no more than 400*F. Sprinkle kabobs with breadcrumbs just before putting on the grill.
    3. Grill first side for 15 minutes, flip over to other side, sprinkle with a bit more of the breadcrumbs, and grill for another 15 minutes or until your desired crispness is achieved.

Notes

Submerge your wooden kabob skewer sticks in a bath of water for 30 minutes prior to placing the potatoes on the sticks.
