  • 1 1/2 TBSP olive oil
  • 3 medium potatoes thinly sliced
  • 1 medium sweet onion sliced
  • 3/4 cup of shredded cheese sharp cheddar or colby-jack is perfect!
  • 1 tsp Paprika
  • 1 tsp crushed red pepper flakes (optional for spiciness)
  • 1 TBSP parsley chopped
  • salt and pepper to taste
  • tin foil


  1. Preheat your grill over med-high heat.
  2. Place a large piece (about the size of a baking sheet) of tin foil on a flat surface. Drizzle the foil in the olive oil.
  3. Combine all other ingredients on the middle of the tin foil and mix thoroughly.
  4. Place a second piece of tin foil (same size) on top of the potatoes and pinch the upper and lower foil pieces together with your fingers.
  5. Tear a small hole in the very top of the foil to use as a steam vent.
  6. Grill the foil packet for 20 minutes, or until the potatoes are tender and cheesy. Enjoy it mesy!
