I am a complete hypocrite of what I usually talk about on the blog here today. I am usually gabbing about using fresh and all-natural ingredients and life is good. Life is good, but sometimes you get a hankerin‘ for something and you can’t get it out of your head until you have it. And in my case, until it is in my mouth. Well, today I am a total hypocrite because I am combining some terrible-for-you ingredients together to make one wonderful dessert.
Insert the scotcharoo. My mom has been making these treats since I was a little girl. Holidays, BBQ’s, you name it, they were there, and devoured shortly after arriving. After figuring out my dietary issues, I no longer could eat this delicacy. Nope, nada, can’t do it. Then I recently discovered that Rice Krispies now come in a brown rice, gluten-free variety!
I can once again enjoy these bad-for-you treats. And here’s the real kicker….Hubby claims that these taste better than the original deal! It may have something to do with the fact that I also add in butterscotch and white chocolate chips to the ever-so-sweet recipe as well. You might as well go all out if you are going to be eating these, am I right?!?
Gluten-Free Scotcharoos

Ingredients
- 5 cups GF Rice Krispies*
- 1 cup all-natural peanut butter
- 1 cup light Karo syrup
- 1/2 cup sugar
- 1 cups bag butterscotch chips 1 1/4
- 1 cups bag semi-sweet chocolate chips 1 1/4
- 1/2 cup white chocolate chips
Instructions
-
In a large sauce pan, heat the peanut butter, sugar, 1 cup butterscotch chips, and Karo syrup on medium heat until melted.
-
Add the rice krispies and stir until evenly coated
-
Place the rice krispie mixture in a 9 x 13 inch pan lined with parchment paper and press firmly down.
-
In a separate container, melt the chocolate chips, white chocolate chips, and 1/4 cup butterscotch chips together.
-
Place the melted chocolate mixture on top of the krispies immediately. Place the pan in the refrigerator for 1 hour to allow the chocolate to set. Enjoy it messy! These are truly finger-lickin' good!
*Make sure when purchasing rice krispies that you are purchasing the gluten-free type, AKA made with brown rice. The common version of the cereal is NOT gluten-free.

My goodness these look so good! I ‘m drooling. Thank you for sharing. Pinned!!!

Thanks for the comment, stopping in, and the pin! I love hearing from new visitors! Thanks for the love! xoxo
They look divine! Just a quick question – can corn syrup be subsidized with anything else? Thanks, Irina
Great question Irina! There may be a substitution for the corn syrup, but I haven’t tried any variations. I hate that there is corn syrup in the recipe, but every once in a while, I have to have these bars! 🙂
It’s definitely ok to like healthy food AND yummy desserts! 🙂 And wowsers, these scotcharoos look AMAZING!! Love em!
Thanks so much! I am usually a healthy eater…but every once ina while, that lil food devil appears on my shoulder 🙂
I’m the same way…all about the healthy, but sometimes you need a little treat 🙂 These are perfect My hubby can’t have dairy anymore, so he would love these! You come up with the best stuff 🙂
Yes! You gotta give into those little cravings every once in a while. At least that’s my motto 🙂 Thanks for the sweet comment!

You are so sweet! The GF Krispies are really good when you cover them in all those taste ingredients! i have yet to actually try them by themselves to see how they compare to the “real deal”.
